If you are hanging sheetrock in a room, the ceiling goes first. Then the walls.
That order gives the ceiling edges better support. It also makes the inside corners easier to fit and easier to finish. When the wall sheets go up after the ceiling, they help lock the ceiling edges in place. Hanging the ceiling first allows you to hide minor gaps along the ceiling. These gaps are hard to fill on the ceiling side.
